In Conversation: Hyoju Park & Rong Yao Soh of Madeleine de Proust

If the name sounds familiar then you're likely already familiar with their delicious and awe-inspiring pastries

To celebrate the launch of UP THERE's collaboration with French label Armor-Lux, we set-about to find a suitable bakery to work with to create something special for the release weekend. It wasn't long before Carlton patisserie Madeline de Proust was on our radar.

If the name sounds familiar then you're likely already familiar with their delicious and awe-inspiring pastries. Founded by partners Hyoju Park and Rong Yao Soh—Madeleine de Proust (MdP) has quickly earned a reputation for being one of the most in-demand spots to grab a treat which is almost too pretty to eat.

Although MdP only started in late 2023, both Rong and Ju have refined their craft in some of the world's top-rated restaurants before taking on their own venture. Between them, both chefs have worked in Michelin-starred restaurants across the world with Ju leaving her position as Attica's head pastry chef to pursue perfection of these delicate cakes.

With such levels of expertise at our disposal it was guaranteed that the UP THERE version would be incredible—after a sell-out weekend it's fair to say everyone loved the limited edition "Matcha Dream" madeleine.

To cap our partnership off, we took some time to chat with both Hyoju and Rong about their journey to founding Madeleine de Proust, along with the influences and inspiration which drew them to cooking in the first place.
